The building had previously been employed as a court house, livestock market, art gallery and brothel before finding a use that was much more `inn keeping`. Paul had ploughed a fruitful furrow as a potato merchant. As soon as he saw The Hoste Arms, it was love at first sight: cashing his chips in, he bought it. Paul1s only previous experience of working in licensed premises had been as a bouncer in a Chinese shanty pub in Western Australia, so having to welcome customers was an entirely new experience. He toured Britain1s best inns to find out why they were doing so well and was energised by what he saw.
